Grilled Peach & Burrata Salad

Ingredients
  • 3 ripe peaches, halved and pitted
  • 2 tablespoons olive oil, divided
  • 5 oz arugula or mixed greens
  • 8 oz burrata cheese
  • ¼ cup toasted pecans or walnuts
  • ¼ cup prosciutto (optional)
  • Fresh basil leaves
  • 2 tablespoons balsamic glaze
  • Salt and freshly ground black pepper
Instructions

Brush the peach halves with olive oil and place them cut-side down on a preheated grill or grill pan over medium-high heat. Grill for 2 to 3 minutes per side, or until they develop light grill marks and begin to soften, then slice them into wedges. Arrange the arugula or mixed greens on a large serving platter and top with the grilled peaches. Tear the burrata into bite-sized pieces and place it throughout the salad. Sprinkle with the toasted pecans or walnuts, add the prosciutto if desired, and scatter fresh basil leaves over the top. Finish by drizzling the remaining olive oil and balsamic glaze over the salad, then season with salt and freshly ground black pepper to taste. Serve immediately and enjoy on its own or with warm, crusty bread.
